Ingredients

  • 1 - 16 ounce jar ready made Alfredo sauce (I used Ragu)
  • 1/2 cup diced cooked bacon
  • 2 1/4 cups frozen, precooked beef fajitas meat (I buy a 24 ounce bag from Sam's Club)
  • 2 cups cherry tomatoes, halved
  • 2 cups cooked, chopped chicken
  • 8 flour tortillas
  • 2 ounces fresh basil leaves, chopped
  • 1 - 4 ounce can diced green chilies
  • chopped lettuce
  • 1/2 cup milk
  • 6 Tablespoons olive oil, divided
  • shredded parmesan cheese
  • 12 ounces pasta
  • salt and pepper
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • diced tomatoes

Instructions

  1. Saute the meat in 1 Tablespoon oil over low-medium heat until heated all the way through
  2. Remove from the heat, cover, and set aside.Cook the pasta according to the al dente package directions
  3. Drain and toss with 4 Tablespoons olive oil
  4. Cover and set aside.Heat 1 Tablespoon oil up
  5. Add the tomatoes and sauté for 2 minutes
  6. Add the chopped basil and cook for 1-2 more minutes
  7. Stir the meat and tomatoes into the pasta
  8. Stir and season with salt and pepper
  9. Serve with shredded parmesan cheese
  10. Makes 6-8 servings.Stir together the Alfredo sauce and milk
  11. Spread out a few spoonfuls on the bottom of a 9x13 pan
  12. Combine the chicken, bacon, green chilies, cheddar cheese, and 1 cup mozzarella cheese in a bowl
  13. Divide the mixture onto the 8 tortillas
  14. Roll each one up and place in the prepared pan
  15. Pour the remaining Alfredo mixture on top
  16. Sprinkle with the leftover mozzarella cheese.Bake at 375 degrees for 20 minutes
  17. Then broil on high for 2-3 minutes to brown the cheese
  18. Remove and serve hot
  19. Top with lettuce and tomatoes
  20. Serves 5-6.
