Ingredients

  • Avocado slices - optional garnish
  • 15 oz can black beans - drained and rinsed
  • 2 Tbs chipotle peppers in adobo - minced
  • 1 tsp cumin
  • 1 garlic clove - grated
  • 2 Tbs lemon juice
  • ¼ c panko bread crumbs
  • 1 c red pepper - minced
  • ½ tsp salt
  • 2 Tbs scallions - minced
  • 1 tsp smoked paprika
  • 2 Tbs water

Instructions

  1. Using a fork, carefully mash the beans with water until smooth.Stir in all remaining ingredients and combine well.Form burgers into four patties; set aside.Heat a non-stick frying pan over medium-high heat.Spray with non-stick spray or drizzle with a little canola oil.Add burgers to the pan and cook for 3-4 minutes per side until warmed through.Serve with avocado slices.
