  • ¼ cup packed brown sugar
  • 2 tablespoons butter, cubed or margarine
  • Vanilla ice cream and caramel ice cream topping, optional
  • ½ cup finely chopped crystallized ginger
  • 6 medium Bartlett or D'Anjou pears
  • 1-1/2 teaspoons grated lemon peel
  • ¼ cup chopped pecans


  1. In a small bowl, combine the ginger, brown sugar, pecans and lemon peel
  2. Using a melon baller or long-handled spoon, core pears to within ¼-in
  3. of bottom
  4. Spoon ginger mixture into the center of each.Place pears upright in a 5-qt
  5. slow cooker
  6. Top each with butter
  7. Cover and cook on low for 4-5 hours or until pears are tender
  8. Serve with ice cream and caramel topping if desired
