Ingredients

  • 2 tsp. baking powder
  • 3/4 c. all-purpose flour
  • 3/4 c. milk
  • 3 c. fresh, ripe peaches* (5-6 peaches)
  • 1/8 tsp. salt
  • 1 3/4 c. sugar, divided
  • 1/2 c. (1 stick) unsalted butter

Instructions

  1. Preheat oven to 350°F
  2. Sift together flour, salt, and baking powder
  3. Mix in 1 cup sugar
  4. Slowly stir in milk to make batter
  5. Melt butter in deep casserole dish (about 3 quarts)
  6. Pour batter over melted butter
  7. Do not stir
  8. Bring a large pot of water to a boil
  9. Carefully add peaches (I use tongs) and boil for about 1 minute
  10. Remove peaches from pot and plunge into a bowl of cold water to stop cooking
  11. Skins can now be easily removed with fingers
  12. Slice peaches into bite-sized pieces
  13. In a clean bowl, Mix the peeled, sliced peaches and 3/4 cup sugar thoroughly and carefully spoon them over the batter.
  14. Bake 1 hour
  15. Batter should be nicely browned on top before removing from oven
  16. Top with heavy cream or vanilla ice cream.
