Ingredients

  • 3/4 cup brown sugar
  • 1 stick butter, softened (8 Tbsp.)
  • 1/2 cup mini chocolate chips
  • 2 1/4 cups flour
  • 3/4 cup peanut butter
  • 1/2 cup peanut butter chips (I used Reese's)
  • 1/4 teaspoon salt
  • 2 teaspoons shortening
  • 1 can sweetened condensed milk (14 oz.)
  • 1 pkg. vanilla CandiQuik
  • 1 teaspoon vanilla

Instructions

  1. In a large mixing bowl, cream the butter and sugar
  2. Add the vanilla and peanut butter and cream again
  3. Slowly add the sweetened condensed milk until creamy
  4. Add the salt and flour and mix completely
  5. Stir in the chocolate chips by hand.Roll the dough into 1 inch - 1 1/2 inch balls
  6. Freeze for at least 30 minutes.Melt the CandiQuik according to the package
  7. Place the truffles one at a time into the melted chocolate using a spoon to completely cover the truffle
  8. Use a fork to remove from the chocolate
  9. Tap gently on the bowl to remove the excess chocolate
  10. Let set on wax paper.In a small microwave safe bowl, combine the peanut butter chips and shortening
  11. Heat for 20 seconds and stir
  12. Repeat until melted and creamy
  13. Do not over heat
  14. Spoon into a plastic bag with one tip cut off
  15. Drizzle over truffles that are set
  16. Store in a sealed container in the refrigerator for 6-7 days
  17. Makes 72 truffles.
