Ingredients
- ¾ cup soft butter
- 1 ¼ cup sifted flour
- 2 teaspoons instant coffee powder
- ¾ cup finely chopped macadamia nuts
- ¼ teaspoon salt
- ½ cup sugar
- 1 cup Heath Toffee Bits
- ½ teaspoon vanilla
Instructions
- Preheat oven to 300 degrees
- Cream butter with sugar, coffee powder, salt and vanilla
- Sift the flour and add to the butter mixture
- Stir the flour into the mixture
- dd the toffee bits and blend into the dough
- Set aside the cookie batter.Chop the macadamia nuts and put them into a bowl
- Drop the cookie batter by the teaspoonful into the bowl of chopped macadamia nuts, and roll to coat the dough shaping it into a ball
- Place the balls of cookie dough on a cookie sheet.Flatten each ball of dough just a bit with the back of a spoon and add a sprinkle of sugar on the top of the flatten cookie dough
- In a preheated oven, bake the cookies slowly for about 20 to 25 minutes, just until the edges are very lightly browned
- Let them cool and serve cookies separately or with coffee ice cream in between two of the cookies.
