Ingredients
- 2 teaspoons baking powder
- 1 cup mixed fresh berries
- 1 tablespoon brown sugar
- dash or two of cinnamon
- 1 egg
- 1 cup milk (I used unsweetened almond milk)
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1 1/4 cups whole wheat flour
- 1/4 cup ground flaxmeal
Instructions
- Mix together the flour, flaxmeal, and baking soda in a bowl and set aside.In another bowl, beat together the egg, milk, salt, cinnamon, vanilla, and brown sugar until mixed well
- Stir in the dry ingredients.Place a skillet or electric griddle over medium heat and spray lightly with cooking spray.Drop 1/4 cup of the batter on the pan per pancake
- Cook until bubbly, about 1 1/2 minutes
- Flip and continue cooking until golden brown.Serve with fresh berries and syrup
