  • 3 ounces bacon (or about 4-5 slices of bacon), cut into 1-inch pieces
  • 1 Tablespoon balsamic vinegar
  • Small jar banana pepper rings
  • ½ teaspoon black pepper
  • Feta
  • ¾ cup feta cheese, crumbled
  • 1 clove garlic, sliced
  • 2 garlic cloves, minced
  • ½ lb. ground beef
  • ½ lb. ground lamb
  • Juice of half a lemon
  • 2 teaspoons kosher salt
  • Shredded lettuce
  • ½ cup buttermilk or milk- you can use more if you'd like it a little thinner
  • ½ cup olive oil
  • ½ onion, cut into 1-inch chunks
  • 1 teaspoon fresh oregano
  • 2 tablespoons oregano leaves (or ½ teaspoon dried oregano)
  • 1 bag pita chips
  • ½ red onion, chopped
  • salt & freshly ground black pepper
  • 1 teaspoon sugar
  • 1 tomato, chopped


  1. Mix together lamb, beef, salt, pepper, and oregano in a medium sized bowl until combined
  2. Cover and refrigerate for at least 1 hour or overnight.Preheat the oven to 300 degrees.Place the marinated beef mixture, onion, garlic, and bacon pieces in a food processor (or blender in a pinch) and pulse until mixture forms a smooth pink paste
  3. It'll look gross
  4. Try not to think about it.Line a small rimmed cookie sheet with foil
  5. Shape the meat puree into a shallow loaf, about 8 inches long, 5 inches wide, and 1 inches high
  6. Bake for 30 minutes or until internal temperature reaches 155 degrees.Allow loaf to sit at room temperature for 15 minutes before slicing.Preheat the broiler to high and place the oven rack as close as possible.Slice the gyro meatloaf as thinly as possible (no more than of an inch)
  7. Lay the slices on a foil lined baking sheet and place them under the broiler for 1-2 minutes or until meat is browned and crispy on the outside
  8. Remove from oven and tent with foil to keep cool.In a food processor, combine olive oil, lemon juice, vinegar, sugar, garlic, oregano, and feta
  9. Pulse until smooth
  10. Add milk, a cup at a time, until desired consistency is reached
  11. Season with salt and pepper to taste.Place pita chips on the bottom of the plate
  12. Top with warm gyro meat, lettuce, tomato, feta, onions, banana peppers, and sauce
  13. Serve immediately.
