  • 1/8 teaspoon almond extract.
  • 1 tablespoon amaretto
  • 1/4 cup, plus 2 tablespoons white basmati rice
  • In a small bowl, combine the cherries and amaretto. Set aside.
  • 1/2 cup dried cherries
  • 1 egg, beaten
  • 2 tablespoons granulated sugar
  • 1/2 cup half and half, divided
  • 1/4 teaspoon kosher salt
  • 1 3/4 cups non-fat milk
  • 1/4 teaspoon vanilla extract


  1. In a medium sized, heavy-bottomed saucepan, combine the rice and salt with 3/4 cups water
  2. Bring to a boil, stir once, and simmer, covered, on the low for 8 to 9 minutes, until most of the water is absorbed.Stir in the milk, 1/4 cup of the half-and-half, and sugar
  3. Bring to a boil
  4. Simmer uncovered for 25 minutes, until the rice is very soft
  5. Stir often, especially towards the end
  6. Remove pan from heat
  7. Very, very slowly pour in the beaten egg, stirring constantly to prevent scrambling
  8. Return pan to heat, and continue to cook and stir for 1 minute.Remove from heat, stir in the remaining 1/4 cup half-and-half, vanilla extract, almond extract, and soaked cherries along with any remaining amaretto
  9. Stir well
  10. Pour into a bowl, and place a piece of plastic wrap directly on top of the pudding, pressing gently onto the surface to prevent a skin from forming
  11. Mixture will continue to thicken as it cools
  12. Serve warm or chilled.
