Ingredients

  • 1 1/4 teaspoon baking soda
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 3-3/4 cups confectioners' sugar, sifted
  • 1 package (8 ounces) cream cheese, room temperature
  • 2 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/4 cup (4 tablespoons) unsalted butter, softened
  • 2 teaspoons pure vanilla extract
  • 1 cup chopped Fisher Walnuts

  2. Preheat oven to 350°F
  3. Line a 15-in

  5. x 1-in baking pan with parchment paper and spray with nonstick cooking spray.2
  6. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, cream together the butter and sugars until light and fluffy; about 3 minutes
  7. Add eggs one at a time to the creamed mixture
  8. Mix in sour cream and vanilla until fully incorporated into the batter

  10. In a medium bowl, sift together the flour, baking soda and salt
  11. Gradually add the dry ingredients to the butter and sugar mixture and mix until combined
  12. Stir in bananas and walnuts until they are fully incorporated into the batter.4
  13. Evenly spread batter into prepared pan
  14. Bake in preheated over for 25 minutes or until the a toothpick inserted into the center of the bars comes out clean
  15. Remove pan to a cool rack to cool completely.5
  16. While the bars are cooling, prepare the cream cheese frosting
  17. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the cream cheese and butter on medium-high speed for about 3 minutes
  18. Mix in the vanilla
  19. With the mixer on low, gradually add in the confectioners' sugar and mix until fully combined
  20. Turn mixer up to medium-high speed and beat until super fluffy; about 3-4 minutes
  21. Use an offset spatula to frost the bars or pipe the frosting onto the bars using a small round piping tip (see not below).
