  • 1 cup basmati rice
  • 1 small bay leaf
  • 1 tsp cumin seeds or caraway seeds (shahjeera/shahi jeera)
  • 1 big cardamom
  • 1 small cardamom
  • ½ inch cinnamon
  • 1 medium sized baingan/eggplant/brinjal cubed
  • 1 a half tbsp ghee
  • 1 small onion finely sliced
  • 2 peppercorns
  • salt
  • 2 cups water


  1. Soak the cubed baingan/eggplant in salted water for 15-20 mins.In a pressure cooker, heat ghee.Add the all the ingredients for the whole garam masala
  2. Fry for a minute or two on low flame.Add the sliced onions.Fry the onions till they change color to light brown.Add the cubed baingan/eggplant
  3. Stir fry the entire mixture for 2-3 minutes on a low flame.Now add the rice
  4. Fry the rice for a minute with the rest of the mixture.Add water, salt
  5. Give the rice a nice stir.Close with the lid and pressure cook for 3 minutes on a high flame.Serve Baingan Pulao with any vegetable curry or dahi kadhi or dal along with raita, pickle and papad.
